Vegetable caviar with beets
For 1 kg of finished caviar:
500 g beet
200 g carrots
150 g vegetable oil
100 g red tomatoes
100 g onions
4 vinegar 80%
pepper
salt
Better to take a maroon beets without white rings in the section.
Prepare, peel the beets and carrots, rinse in cold running water, cut into slices, twist in a meat grinder, put the mixture in an enamel pot, put 1.5-2 hours on low heat.
Put stewed vegetable mass on the pan, pour the oil and pepper and add salt, stir and fry on low heat for 40 minutes, then add the sliced tomatoes and vinegar, cook for another 15 minutes.
