Butcher carp fillets, leaving the skin, rub prepared from 3 tbsp water and 3 tablespoons vinegar mixture to remove in the cold for 3 hours.
Cabbage, carrots, ginger and leeks cut into strips, chopped garlic and seeded chili peppers, sliced mushrooms.
