Potatoes stewed with vegetables
100 g broccoli
3 potatoes
2 tomato
1 onions
1 garlic clove
1 glass vegetable broth
3 tbsp. vegetable oil
? tsp. dried oregano
? tsp. dried thyme
Slice the potatoes, garlic and onion cubes, disassemble broccoli into florets.
Scald the tomatoes with boiling water and remove the skin, cut into cubes.
Fry the garlic and onion in oil, add broccoli and potatoes, cook for another 5 minutes, then add the tomatoes and pour the broth. Simmer for 10 minutes, then add the thyme, oregano, Bay leaf, pepper and salt and simmer for another 5 minutes
Before serving, put the steamed potatoes with vegetables on a platter and sprinkle with green onions rings.
