Scrambled eggs with smoked cod in Spanish
350 g potatoes
125 g smoked cod
50 g grated hard cheese
6 eggs
2 onions
1 sweet red pepper
3 tbsp. vegetable oil
2 tbsp. chopped parsley
1 tbsp. cream
1 tbsp. butter

1 tsp. minced garlic

Dice the onion and potatoes and fry with garlic in butter, add chopped peppers and cook another 3 minutes
Simmered cod until tender, pepper and salt, allow to cool, cut into cubicle, add cream and melted butter.
To ready the vegetables add the beaten eggs, add chopped parsley, pour all the mixture with cod, cook about 5 minutes on low heat.
Sprinkle the omelet with smoked cod in Spanish grated cheese, place under the grill, cook for 3 minutes
