Vegetable soup with potatoes and leeks
5 potatoes
1 large leek
olive oil
Wash, peel potatoes, cut into small cubes, onion cut into rings.
Pour into a saucepan with 1 liter of water, put the vegetables, boil until tender over medium heat.
Grind the vegetables in a blender, put back in the pot with the broth, season with olive oil and spices to taste, stir.
Serve vegetable soup with potatoes and leeks, sprinkle with herbs.
