Soup with zucchini
1 l water
2 small zucchini (courgettes)
a few Basil leaves
parsley
vegetable oil
grated cheese
1 the stalk of leeks
50 g vermicelli
salt, black pepper
Zucchini peeled, cut into thin slices. Fry in vegetable oil finely chopped leeks and Basil. Add zucchini, cook for another few minutes on moderate heat. When the vegetables will become a Golden color, pour water, add salt and pepper, add the noodles and boil it until tender. Sprinkle with grated cheese, cool. Before serving, sprinkle with finely chopped parsley.
