Take a pan, pour 1 liter of water, bring to a boil, salt the, add the bay leaf, sugar, pepper, boil for 5 minutes, remove from heat, put the meat and marinade to give it a cool (marinade should completely cover the meat if it is not enough, you need to add water and increase the amount of salt and sugar).
Leave the meat in the marinade for 12 hours, it is better to lay on top of the load.
